This is one of my most favorite "treats to share" recipes. It is adapted from a youth leader of mine many years ago.
16 cups air-popped popcorn (Approximately 1/2 c. popped), placed in a large clean brown paper grocery bag
1 cup brown sugar
1/4 cup corn syryup
1/4 cup butter
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla
In a large microwave safe bowl, combine the brown sugar, corn syrup, butter, and salt.
Microwave for one minute on high, then stir.
It should look like this:
Now, microwave again for one minute, repeating three times, stirring after each minute.
Add the vanilla and soda, then stir together.
After it has foamed up really well, you're ready to add it to the popcorn.
Fold the bag down, then give it a good shake.
The more you shake the bag, the better distributed the caramel.
After cooking for the second time and shaking, pour out the popcorn onto a large baking sheet.
Try to restrain yourself, these will be hot for about 5 minutes! Then, go for it! This makes great gifts for neighbors, or for a fun family night activity. Last night we watched "Night at the Museum 2" with our kiddos and snacked on this yummy stuff.
