Well, long story short, Swerve sponsored a giveaway on Maria's blog for a Kitchenaid Mixer. And I won. I still am in a bit of shock. I got to pick my color, so this Aqua Sky beauty now lives on my counter.
Dolly was more impressed with the boxes the mixer was packed in.
The Swerve company also sent me this cute little lunch box filled with baking supplies and some of their Confectioners Swerve which I can use to make some fun treats.
Swerve measures cup for cup as sugar would in a recipe. So I thought I'd try altering Alton Brown's hot cocoa mix for my new dietary needs. It is so good! Here is my much lower carbohydrate and lower calorie version of my favorite holiday beverage:
You'll need:
- 1/2 cup powdered Swerve
- 1/4 unsweetened cocoa powder
- 1/4 teaspoon sea salt
- pinch of xanthan gum (makes it thicken up a bit)
To make a steaming mug of cocoa, measure 3/4 c. unsweetened vanilla almond milk into a small sauce pan. Add 1/4 cup cocoa mix and stir with wire whisk and simmer on medium heat until well combined.
Pour into your favorite mug, and enjoy!
Mix makes approximately 4 servings.
