This is one of my most favorite "treats to share" recipes. It is adapted from a youth leader of mine many years ago.
16 cups air-popped popcorn (Approximately 1/2 c. popped), placed in a large clean brown paper grocery bag
1 cup brown sugar
1/4 cup corn syryup
1/4 cup butter
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla
In a large microwave safe bowl, combine the brown sugar, corn syrup, butter, and salt.
Microwave for one minute on high, then stir.
It should look like this:
Now, microwave again for one minute, repeating three times, stirring after each minute.
Add the vanilla and soda, then stir together.
After it has foamed up really well, you're ready to add it to the popcorn.
Fold the bag down, then give it a good shake.
The more you shake the bag, the better distributed the caramel.
After cooking for the second time and shaking, pour out the popcorn onto a large baking sheet.
Try to restrain yourself, these will be hot for about 5 minutes! Then, go for it! This makes great gifts for neighbors, or for a fun family night activity. Last night we watched "Night at the Museum 2" with our kiddos and snacked on this yummy stuff.
Enjoy!
That popcorn looks yummy. I always avoid it, though because I'm afraid it's still a choking hazard for my youngest. I loved seeing your decorations, too. And those pajamas you made! You have a lot of talent.
ReplyDeleteMmmm... I might try this with the kids tomorrow!
ReplyDeleteWould you be kind enough to verify how much popcorn kernels are needed. Do I need 16 cups or that 1/2 cup of kernels popped makes 16 cups. I am sorry to be confused, but I cannot figure out what you mean.
ReplyDeleteGreat question! Your 1/2 cup of kernels once popped should equal 16 cups popcorn. Best to pop the corn, then measure 16 cups with a 1 cup measure into your paper bag. I hope that clarifies things for you. Best wishes.
ReplyDeleteI just finished making this and WOW! Delicious! And so easy. My 10 year old daughter will be making this for her next 4-H home ec project. Thanks for sharing!
ReplyDeleteThanks for your comment, Jennifer! This is one of my most favorite treats to make...we always keep some large paper bags on hand for when the fancy strikes.
